Whole buffalo milk, boiled down before it is set. Nothing is added to thicken it, because nothing needs to be.

SLOW

Desi. Which is a word people use loosely, so here is what it means here.

The milk is boiled down first, cooled to the temperature of a hand, and stirred through with a ladle of yesterday’s dahi. Then it is covered and left alone all night in a room nobody heats.

Nothing about that is efficient. A commercial set runs at 43°C in a cabinet and is finished in four hours, and it is genuinely curd at the end of it. It is just curd that has been rushed, and rushing is what a curd tastes of — flat, sweet, and set with something that is not culture.

Not one quick pro quo. Every tub in the counter was poured the night before.

If milk does not love you

A long ferment eats its own sugar. For eight to ten hours the cultures do one thing and one thing only — turn lactose into lactic acid. That acid is what sets the curd and what makes it sour, and every gram of it was lactose to start with.

So what reaches the tub carries a fraction of what went into the pot, and it goes on falling for as long as the tub is alive. A curd set in two warm hours never gets anywhere near that far.

And they arrive still working

The cultures are alive when you eat them, and they bring their own lactase down with them — they go on breaking the sugar apart after they have left the tub.

Which is why plenty of people who cannot finish a glass of milk finish a bowl of this without thinking about it once. If milk is a problem for you, this is the form of it worth trying. We would still say start with a small one.

TWO TUBS

Same culture. Two tubs.

One recipe splits at the milk and nowhere else. Whatever else changes between these two, the eight hours do not.

    Whole buffalo milk, cream and all, in the small navy tub. This is the one the matho, the makhan and the lassi are all made out of, and the one to ask for if you came here to enjoy yourself.

    The same culture and the same eight hours, set on toned milk instead. It comes in the big tub, because the people who buy it buy it by the week — gym buddies who want the protein and the cultures without the cream that comes with them.

Nothing else

No gelatin, no milk powder, no stabiliser, no set-in-two-hours shortcut. If it is thick, it is thick because it was given the time to become thick.
